So, I'm trying to reduce the amount of meat i cook at home.
I learned that quinoa has lots of protein.
So, i made up this recipe, and i think it turned out pretty good. If you make adjustments if you try it, let me know...
Quinoa and Basil Salad
(You may want to cut this recipe in half)
Cook in rice cooker:
14 oz (2 1/3 C) quinoa
4 2/3 C water
Toast:
1 ½ C pine nuts
Add:
½ C olive oil plus 2 medium garlic cloves, minced – combined to distribute garlic
2 t sea salt
2 medium red onions, diced
2 med tomatoes, diced
2T minced Italian parsley
1T minced chives
¼ C olive oil + enough basil to make ¾ C puree combined
Toss everything together once quinoa has cooled down to room temperature
Eat warm or at room temperature

I'm having a pot luck tonight and I think I'll make this. It sounds sooo YUMMY!
I oftenadd some quinoa to my rice to add texture, flavour, fibre, and protien to plain old rice. Red lentils are also great to mix with rice and quinoa!
