      <title>Game meat - ruminants of the forest taste great and are good for you</title>

      <description>&lt;div&gt;Mmmm...venison.
&lt;br/&gt;
&lt;br/&gt;I've grown up eating venison, and I love it.  My dad, brothers, and family friends are all hunters.   I view it as the ultimate in free range organic red meat.  It's lean, nutritious, and all-around good fuel for my body.
&lt;br/&gt;
&lt;br/&gt;My only ethical reservation is that the harvest of these animals is dictated by regional wildlife management agencies, which may or may not manage populations in the right way.  Are the local sixty-year-old men just telling tales when they compare the Oregon of their youth to the Alaska of today, with it's abundant game?  My hunch is that they aren't, and it nags at me sometimes when I'm chewing a tendy and juicy elk steak.
&lt;br/&gt;
&lt;br/&gt;Does anyone else in the tribe eat venison, or abstain for ethical reasons?  I'm curious to hear your thoughts on the subject.

      <title>Foragers feed sustainability</title>

      <description>&lt;div&gt;I just wanted to thank yall for starting this tribe.  An open mind about meat eating is very important to the open discussion about sustainability.  I'll illustrate. Many grass land regions of mountain nor-cal have poor soils.  In order to grow food crops on these lands, large amounts of fertilizers and water would be needed.  Conversely, cattle can forage these soils, eating many of the grasses that are of low to zero nutrient qulality to us. In this way, a cow converts the forage of a nominally fertile area into an amazingly energy rich food stuff for us Peoples.  So, a grazing cow is actually a much more sustainable and responsible means of food production in this case... Aren't cows nice, they cruise around and eat stuff we can't, then they kindly turn it into steak.  Protect open space, conserve resources, live sustainably. EAT MEAT!&lt;/div&gt;

      <title>Really bad idea USDA bill</title>

      <description>&lt;div&gt;The new amendment to the Farm Bill makes it illegal for states to prohibit "the sale of USDA inspected products." 
&lt;br/&gt;
&lt;br/&gt;As worded, if this passes, the impact at the state level would be:
&lt;br/&gt;
&lt;br/&gt;-Unable to pass state/local laws which prohibit sale of foods from inhumane sources (force fed geese, tortured veal, etc.)
&lt;br/&gt;-Unable to pass state/local laws which prohibit sale of foods with GMOs, chemicals, or any ingredient which the USDA does not prohibit
&lt;br/&gt;-Even the inability to condemn spoiled or contaminated foods at the state and local level, where 90% of food inspection takes place
&lt;br/&gt;
&lt;br/&gt;I urge you to sign the related petition, and I warn you to uncheck the "alerts" section to avoid eco-spam. Sigh:

&lt;br/&gt;I think this ranks as the most interesting "secret ingredient" on Iron Chef America yet. I was very disappointed, however, that the ingredient itself--a very unusual one in modern America--was not discussed at all, nor did any of the dishes reflect the long culinary use of wild boar in Europe and Asia. Where was Alton Brown's usual analysis? 
&lt;br/&gt;
&lt;br/&gt;I'm not up on the history of wild boar in Asia, but I know that it was considered prize game in medieval Europe, though I think it may now be considered a pest there (after all, it really is just a wild and very dangerous form of pig). Out of curiosity, I did some Google searches and learned that the wild boar is not native to the New World, but was introduced by Europeans and ultimately crossbred with domestic pigs, so "wild boar" in the Americas is probably not what you would have seen centuries ago in Europe and Asia. 
&lt;br/&gt;
&lt;br/&gt;I found this very recent Austin, Texas newspaper article about this episode, which Iron Chef fans might enjoy (it puts to rest the question of whether the contestants know the ingredients in advance--they knew it would be one of three):

&lt;br/&gt;I also found the wild game farm in Texas that supplied the wild boar for this episode:

&lt;br/&gt;If their website is to be believed, this ranch practices sustainable and humane methods. But I uncovered something else, a bit disturbing, in my brief Internet forays on this topic. Apparently there are a number of private hunting "resorts" in the southern United States and Canada that set up wild boar to be shot by trophy hunters. This type of "sport" is hardly news, and as a carnivore, I'm not questioning hunting, nor am I ignorant as to where my meat comes from. But am I the only one who finds this troubling? 
&lt;br/&gt;

We have trained boar dogs, if/when requested, to find the wild boar for you. When a wild boar is found you can take it while it is distracted by the barking dogs. The dogs guarantee you'll get your wild boar." 
&lt;br/&gt;
&lt;br/&gt;I know boar dogs were used in medieval Europe, and yes, I know bow hunting was done then, but aren't we in the 21st century? Do we really need to make an animal suffer like this these days just so some wannabe "big-game hunter" can hang a pair of tusks on his wall? 
&lt;br/&gt;
&lt;br/&gt;Here's another one that made me positively ill, from south Texas:

Heifer.org is a charity where you can sponsor an animal or animals for a family in need. There are all different levels of gifts, with animals used for different purposes:

&lt;br/&gt;I learned that quinoa has lots of protein.
&lt;br/&gt;
&lt;br/&gt;So, i made up this recipe, and i think it turned out pretty good.  If you make adjustments if you try it, let me know...
&lt;br/&gt;
&lt;br/&gt;Quinoa and Basil Salad
&lt;br/&gt;(You may want to cut this recipe in half)
&lt;br/&gt;
&lt;br/&gt;Cook in rice cooker:
&lt;br/&gt;
&lt;br/&gt;14 oz (2 1/3 C) quinoa
&lt;br/&gt;4 2/3 C water
&lt;br/&gt;
&lt;br/&gt;
&lt;br/&gt;Toast:
&lt;br/&gt;
&lt;br/&gt;1 ½ C pine nuts
&lt;br/&gt;
&lt;br/&gt;
&lt;br/&gt;Add:
&lt;br/&gt;
&lt;br/&gt;½ C olive oil plus 2 medium garlic cloves, minced – combined to distribute garlic
&lt;br/&gt;
&lt;br/&gt;2 t sea salt
&lt;br/&gt;2 medium red onions, diced
&lt;br/&gt;2 med tomatoes, diced
&lt;br/&gt;2T minced Italian parsley
&lt;br/&gt;1T minced chives
&lt;br/&gt;
&lt;br/&gt;¼ C olive oil + enough basil to make ¾ C puree combined
&lt;br/&gt;
&lt;br/&gt;
&lt;br/&gt;Toss everything together once quinoa has cooled down to room temperature
&lt;br/&gt;
&lt;br/&gt;Eat warm or at room temperature&lt;/div&gt;

      <description>&lt;div&gt;I'm new to this tribe thing, so apologies in advance for any faux pas. I like the title of this tribe, because I have been thinking a lot about my own meat eating the past few years. I agree with the idea of ethical meat eating (and vegetable eating too for that matter).

&lt;br/&gt;Do any of you grow your own meat? I'm thinking of growing chickens next year. If I can't slaughter my own, then I wonder if it's ok for me to eat meat. That's just my idea for myself, I'm not saying that's how everyone should be. Anyway, just curious if any of you grow or have grown your own meat. &lt;/div&gt;

I've been trying to eat ethically for some while now (read: when I could afford to, when iI could remember to), but while reading Jane Goodall's "A Harvest for Hope" over the last week or so, Ive decided to whole-heartedly follow this way of life.

&lt;br/&gt;I was wondering, do any of you know of good places to buy organic or grain-fed meat in Toronto (besides Whole Foods that is!)?

      <title>Kosher beef</title>

      <description>&lt;div&gt;A friend of mine just relayed some information he found out about on NPR, then investigated on the internet. Apparently there is some Kosher cattle plant in Wisconsin where they were slaughtering the cows by slitting their throats, then tearing out their tracheas, leaving the still-alive cows to thrash and stumble around, suffocating, suffering and bleeding to death. This was caught on video, then broadcast on the internet (and my friend now says he regrets viewing it - I don't know what he was thinking!). The NPR broadcast talked about PETA's obvious problem with this particular slaughterhouse, and there was argument from a person in the Jewish community, of being persecuted. He compared PETA to Nazis, for criticizing and trying to halt an age-old tradition.
&lt;br/&gt;
&lt;br/&gt;My question is this: I was under the impression that Kosher meat was, for the most part, humanely raised and slaughtered. Is the tearing of tracheas and torture of cattle as they die and suffocate slowly a norm in Kosherworld, or did this particular slaughterhouse take the meaning of Kosher into their own hands?
&lt;br/&gt;
&lt;br/&gt;I am not putting much credibility into the one man who called PETA Nazis, as he clearly has issues. I sincerely doubt that most people would try to justify such gruesome deaths, considering it gave my friends so many heebies and jeebies.

&lt;br/&gt;After speaking with a couple of intuitive healers, I have begun eating chicken, salmon and halibut once in a while for spritual connection with these animals and more specifically for their protein contribution to my diet.
&lt;br/&gt;
&lt;br/&gt;Since I don't know how to cook them yet, what do I look for in chicken at the healthy food stores to know it was a free range, happy chicken?  I realize sometimes labels may say this but most of the time they don't HAVE to...
&lt;br/&gt;
&lt;br/&gt;Also, is there anyone in the Portland metro area who would like to trade herbal meds for a chicken cooking lesson?

Ranchers are finding that cattle herds and the land thrive when cattle and livestock are treated more like a wild herd. Altering cattle grazing patterns and herd clustering to emulate those of their buffalo predecessors has a significant positive impact on the environment, including the health and diversity of the native grasses. Rodents are controlled by providing natural habitat for predators like eagles. According to Jim Gould, HRM practitioner on his family's ranch, "Everything has a place in this life, you just have to figure out what it is."

      <description>&lt;div&gt;I live in Los Angeles, and the best source of ethical meats is Wholefoods Market.  It's definitely more expensive than regular supermarkets, but the quality is unmatched anywhere else.  Every meat they sell is, at the very least, free-range and non-antibiotic.  You can find chicken like this for about $2/pound, which I think it very reasonable. 
&lt;br/&gt;
&lt;br/&gt;They also have free-range organic meats (organic fed) for much more -- but definitely worth it.  They have almost everything you could want, from rabbit to many types of fowl, to beef and buffalo, lamb, pork, and dry-aged beef.  They also come from local CA sources, and as far away as New Zealand.  The meat departments are top notch (although I do notice the quality and freshness can vary slightly from store to store, so I only shop at my favorite one -- at Fairfax and 3rd St. -- you can skip the Beverly Hills store).  
&lt;br/&gt;
&lt;br/&gt;I'm very thankful to Wholefoods for offering healthy and ethical resources in such a big city, where it can be a challenge to feed yourself healthily.  And once you've become accustomed to such quality, anything else won't taste right.  =)&lt;/div&gt;
